How To Prepare

Cool cake in pans on a wire rack for 10 minutes then remove from pans and cool completely on wire rack before frosting.

For the frosting: In a large bowl using an electric mixer beat together 2 sticks of softened butter, 4 cups of confectioners’ sugar and 1 teaspoon of cardamom until light and fluffy, about 3 minutes. Beat in 2 tablespoons of heavy cream until light and fluffy.

Beat in 2 teaspoons Kahlua or coffee liqueur for a coffee cake or 1 teaspoon of peppermint extract for a mint chocolate chip lover’s cake. Spread frosting evenly over cooled cake. Garnish with a few crushed nuts.For Layering Cake:Preheat oven to 350 degrees F (175 degrees C). Place the layers on a rack in an 8×8-inch (2.5 L) square baking dish, making sure they are spaced out well from each other to allow for spreading.

Bake for about 12 minutes until cakes are set and just turning golden. Let completely cool before you can frost with your favorite buttercream icing combination.
