-1/2 cup water
-2 tbsp minced ginger

-2 cloves of garlic, minced.
-3 green onions, chopped into bite-size pieces

I had some ginger that needed to be used up, so I used a whole bulb (about 8 inches of ginger)! Feel free to cut the amount in half if you are using a smaller piece of ginger. You can also always use store bought grated or minced ginger.

You could also use turbinado or coconut sugar if desired. White sugar is not recommended for this recipe as it will burn when cooked too long at high heat. It is best to cook your dish as quickly as possible after marinating to preserve the ingredients.

5. Stir until boiling…Boil for 2 minutes, stirring constantly
6. Add brown sugar. Stir until dissolved
7. Lower heat to medium-low and simmer marinade for 5 minutes.
8. Add green onions and pepper.
9. Allow to cool for 15 minutes, then add chicken.

If you are using tofu, wait till it is all cooked through before adding, then stir to coat with sauce. Allow to cool completely.

Notes:You can marinade meat or tofu overnight in the refrigeratorIf you skip the cooling step, your chicken will never stick to your pan! Enjoy!
