-1 1/2 cups prepared artichoke hearts, drained and thinly sliced
-1/2 cup chopped red onion
-3 tablespoons extra-virgin olive oil
-1/4 teaspoon salt
-1/4 teaspoon black pepper
-6 radishes, trimmed and thinly sliced
-1/4 cup white balsamic vinegar
-3 tablespoons Dijon mustard
-3 tablespoons honey
-1 large garlic clove, minced or pressed through a garlic press (optional)
-Freshly ground black pepper (to taste)
-1/2 cup crumbled Gorgonzola cheese

How to prepare:

1. In a medium bowl, combine the artichoke slices, red onion, sliced radishes, 3 tablespoons of the oil, salt and black pepper.
2. In another bowl or jar with a lid, whisk together the vinegar, Dijon mustard, honey and garlic.
3. Pour the dressing over the salad mixture and toss to coat.
4. Sprinkle with parsley and cumbled Gorgonzola cheese
5. Taste and adjust seasoning as needed.

Cover and refrigerate for at least 2 hours or overnight. Serve cold or at room temperature.

3. In a medium bowl, combine the shredded chicken, diced onion, garlic, artichoke hearts, vinegar, Dijon mustard and salt and pepper.
4. Mix well until all ingredients are evenly mixed.
5. Pour mixture into the prepared baking dish.
6. Sprinkle 1/2 cup of flour over the top of the chicken mixture.
7. Bake in preheated oven for 25 minutes or until lightly browned.

-1 (14-ounce) can artichoke hearts, drained and quartered
-2 cans diced tomatoes
-1/4 cup parsley leaves, chopped
-salt and freshly ground black pepper, to taste

How to prepare:

1. Preheat the oven to 375 degrees F.
2. In a large bowl, mix together the minced meat, onion, 2 tablespoons of oil, garlic, red pepper flakes, thyme leaves and vegetable broth or water. Mix well until all ingredients are combined.
3. Add in the artichoke hearts, tomatoes and parsley leaves and mix well again.
4. Season with salt and black pepper to taste.
5. Place mixture into a greased 9 x 13 inch baking dish and bake for 30 minutes or until the stuffing is cooked through.
