How to prepare:

1. In a large pot, heat the oil over medium heat.
2. Add the oxtails and cook until browned, about 5 minutes.
3. Add the onion, celery, carrots, garlic, ginger, tomato paste, scallions (green parts only), red pepper (if using), Jamaican seasoning and salt and black pepper to taste.
4. Simmer for 5 minutes.

How to prepare:

1. In a large skillet or Dutch oven, heat the olive oil over medium-high heat.
