-4 Potatoes peeled (Russet or Yukon gold potatoes are great in this creamy soup).
-1 tablespoon olive oil
-1 onion, diced
-2 garlic cloves, minced
-1 teaspoon smoked paprika
-1 teaspoon ground cumin
-8 cups chicken broth
-6 cups chopped kale (about 2 bunches)
-Salt and pepper to taste
-1 smoked chouriço sausage

You can substitute field roast spicy mexican chipotle sausage for the meat smoked sausage if you are vegetarian or vegan.

How to prepare:

1. In a large pot or Dutch oven, heat the oil over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
2. Add the smoked paprika, cumin, and salt and pepper to taste.
3. Stir in the chicken broth and potatoes.
4. Bring to a boil over high heat, then reduce to a simmer and cook until the potatoes are very tender, about 20 minutes.
5. Remove from the heat and let cool slightly.
6. Working in batches if necessary, carefully puree the soup and 2 slices of chouriço in a blender or food processor until smooth.
7. Return to the pot, season with salt and pepper to taste, and bring to a simmer.
5. Add the kale and sausage (if using), and let simmer until wilted, about 5 minutes.

Serve warm.

-1 Bunch (120 grams) Kale
-1 Cup Water
-4 Cups All-Purpose Flour
-Extra All-Purpose Flour for dusting
-One Large Egg
-½ tsp Sea Salt

How to prepare:

1. Blend kale with water until smooth.
2. Discard the pulp from the kale juice after passing it through a fine-mesh sieve to make1 cup of Kale juice.
3. In a mixing bowl, combine two thirds of the flour with the salt and the egg and mix well using a fork.
4. Slowly add the kale juice until all of the flour is incorporated and the dough is shaggy.
5. Turn and push the dough repeatedly until it feels smooth and elastic, 10 to 12 minutes.
6. If the dough becomes soft or sticky, add more flour.
7. Put the plastic wrap over the bowl and let it rest for one hour.
8. Divide the dough into four pieces.
9. Sprinkle flour generously on a large surface.
10. Use a rolling pin to roll each portion into a 12-by-9-inch rectangle.
11. Make sure the dough sheet is floured, fold both sides to the center (remember to dust the dough with flour), and fold it again.
12. Next, slice the noodles as thin or wide as you like, but as evenly as possible. Stretch the noodles gently if they are uneven in thickness.
13. The rest of the dough should be processed in the same way.

Place the kale noodles in the fridge for later use or boil them instantly.
